Heidi’s Cream Wafers
My favorite Christmas recipe is one I’ve never actually made myself. Rather, it’s one my mom makes for me every year (which might contribute to what makes it’s so tasty☺). Crisp cookies on the outside with a buttery frosting in the middle, it literally produces an “MMMMM…” out of my mouth after every first bite.
INGREDIENTS
1 c. butter
1/3 c. whipping cream
2 c. flour
Sugar
Preheat oven to 375 degrees
Almond butter filling: ¼ c. soft butter
¾ c. confectioners sugar
½ tsp. almond extract, option tint green
DIRECTIONS
Mix 1st three ingredients, Chill for 1 hour. Preheat oven. Roll dough 1/8” thick on a lightly floured board. Cut in 1" circles. Transfer to a flat container heavily sprinkled with sugar. Turn to coat both sides. Prick several times with a fork. Place on an ungreased cookie sheet and bake until slightly puffy. Put two cooled cookies together with almond butter filling. Enjoy!
